Most of the island’s dining is barefoot and casual, which is exactly how it should be. But when you want one proper dinner during your stay, an anniversary, a last night, a reason to put on a nice shirt, Cōste is the place. It is the signature restaurant at the DiamondHead Beach Resort, with floor-to-ceiling views straight out over the Gulf and a dining room that is calm, polished and unhurried.
The menu leans coastal: fresh Gulf fish prepared with a bit more care than the fish-shack standard, good steaks, a thoughtful wine list and desserts worth saving room for. Service is attentive without being stiff. Ask for a window table and book it for about half an hour before sunset; the light through those windows is the whole point.
It is open to the public, so you do not need to be staying at the resort. Reservations are strongly recommended in season. Dress is resort-smart rather than formal. If you want the same view with a more relaxed vibe, Cabañas downstairs is the sister spot on the sand.
